To lubricate really well, a good grease needs molecules that flow easily over each other (less drag) and coat the metal surface thoroughly and evenly to prevent metal on metal contact (which leads to parts wear). To put it in the words of a nerd: Peaty's base oils are formulated with synthetic esters that have a specific polarity. Ok... who is ester and why is it in your oil?! Ester is not a female, it is a variant of synthetic oil! Esters are more expensive than pure synthetic oils because the ingredients are all derived from natural sources and then have to be synthesized in much smaller quantities than regular synthetic oil. The most important reason for using ester oil is its good adhesion to surfaces. Ester oil forms an electrochemical bond because the ester molecule is polar, similar to a refrigerator magnet. It is attracted to metal and sticks like Peaty's hand to a fresh, cool pint of Yorkshire ale. Because of this electrochemical charge, the fat also naturally spreads evenly across a surface as the individual molecules repel each other - like trying to push two positive ends of a magnet together.
